Homestyle chicken wings are very popular products in convenience food environments, both at home and in QSR restaurants. JBT Marel has developed a dedicated convenience food process for this type of poultry product, delivering consistently prepared wings that only require a short frying time before consumption.
The Homestyle Chicken Wings Process produces high-quality coated wings in a consistent and repeatable manner. The integration of processing technology and software ensures the production of convenience products with maximum added value.
Injecting and marinating: adding value and flavor
Our Schröder IMAX injectors work based on classic injection curing by means of hollow needles. Injecting achieves the desired flavor profile such as taste, bite and juiciness as well as improving yield.
Unlike the conventional tumblers available on the market, which are loaded batch by batch by hand, ValueDrum has been developed for the in-line production of coated or marinated fresh products.
After injecting and/or marinating, chicken wings can be transported to the coating steps.
Coating: pre-dusting/flouring
Pre-dusting, or often referred to as flouring, creates a ‘glue layer’ for enhanced coating adhesion for the following coating steps. Specifically, this steps helps to prevent batter and crumbs from sliding off during cooking.
Coating: tempura battering
After a fine layer of pre-dust, chicken wings are automatically transported downstream to the tempura battering machine, during which the chicken wings are fully immersed in tempura batter. This guarantees all-round coverage however uneven the product surface. When products leave the machine, an air-knife blows off excess batter.
Coating: breading
To achieve a flaky coating appearance, a dry breading is applied by tumbling the chicken wings in one of our drum breading solutions. This process ensures optimal homestyle coverage and a consistent finish across the entire product.
The entire coating process is automated, which greatly reduces manual labor and operator dependency.
Frying, cooking, freezing and packaging
The homestyle coated wings are then par fried in our industrial frying solutions for a golden, crispy result. To fully cook the products, further heat treatment is required. Industrial linear and spiral ovens support continuous flow, while contact cookers and searing or grill marking equipment deliver texture and visual appeal. Depending on your product requirements, our experts will advise the most suitable industrial cooking solution.
